Hi, this plate is still common here in Peru, it's called "carapulcra" If yo go to google.com.pe you will find lot's of infos on theses dry potatoes so easy to make in your backyard and it can last for years if not decennys. At the root of Inka and pre-Inka culture was this fascination for stroring food and seeds for many years for all their population in case of troubled times.
And this dry potato Carapulcra is so tasty, one of my favorite plate.
