    Default Crock Pot Recipes

    I LOVE crock pot cooking. Such a great way of cooking. Anyway, I was wondering if anyone on Avalon would share some recipes with the rest of us they use in crock pots. I'm always looking for new recipes Something simple like putting a big piece of beef with carrots for 8-12 hours yields some delicious eating but I was wondering about more recipes. Today I had a Cuban recipe in a crock pot with black beans and pork. Not a big pork eater, as I avoided the meat.. But it was delicious topped with jack cheese and eaten with tortilla chips.

    Anyone have any recipes?

    I love my crock pot too :-) Yes do google/search "crock pot recipes" and you will be all set for life :-) Yummy crock pot to us crock pot chefs :-)

    I am a crockpot-a-holic. Please PM me any time you want some new recipes as I use mine like 3 times a week! I am a vegetarian now, but I used to eat meat, so I still know some good meat recipes as well! Here is my absolute favorite crock pot recipe though:

    Crockpot Red Lentil Curry



    INGREDIENTS
    4 cups regular brown lentils (I used maasor lentils this time)
    2 onions, diced
    4 cloves garlic, minced
    1 tablespoon minced ginger
    4 tablespoons butter (optional)
    5 tablespoons red curry paste
    1 tablespoon garam masala
    1½ teaspoon turmeric
    2 teaspoon sugar
    a few good shakes of cayenne pepper
    2 cans tomato puree (29 ounces each)
    1 teaspoon salt plus more to taste
    ½ cup coconut milk or cream
    cilantro for garnishing
    rice for serving

    INSTRUCTIONS
    Rinse the lentils and place them in a large crockpot. Add the diced onions, garlic, ginger, butter, curry paste, garam masala, turmeric, sugar, and cayenne. Stir to combine.

    Pour just 1 can of tomato puree over the lentils. Re-fill the can with water twice and add to the crockpot. Stir to make sure that the lentils are covered with liquid. Cover and cook on high for 4-5 hours or low for 7-8 hours.

    Check once or twice during cooking to add more water or tomato puree if the lentils are soaking up all the liquid. The amount of water or tomato puree you add depends on how soupy your want your lentils to be. Taste and season with salt. Lentils will be soft when they are done cooking.

    Stir in the coconut milk and sprinkle with cilantro just before serving. Serve over rice or naan bread.

    ***Just as a note, I almost ALWAYS use more water than this recipe calls for. ESPECIALLY if I am leaving the crock pot going during my work hours because it will dry out and some will stick to the sides if you don't. ALSO, this recipe freezes really really well and makes a ton!

    One of my favorites is Pork Tenderloin and Pinto Beans. Slow cook the beans for hours and hours, along with the meat (cut into 1 inch chunks). Add salt, pepper, and cumin. A little garlic. Cook this for many hours, until supremely tender. Add chopped onions about 20 minutes before serving (don't want them cooked away to nothing). A big hunk of corn bread on the side. Hmmmmm, good. So simple, yet so good. A yummy cole slaw on the side. Cold beer or iced tea.
