    Coconut oil is so awesome, I don't have time to detail all it's benefits. This article indicates some. I have time to tell you though, that a great snack for kids is kale chips cooked in coconut oil and salt. Tear kale into strips, add oil and salt, then cook in an oven, low and slow.

    Quote It's amazing how coconut oil has recently been acknowledged for the healthy oil that it is after having been vilified for decades as a heart attack oil. Now it's been discovered to boost even brain health.

    Defaming coconut oil saturated fat was part of the 1950s creation of low and no fat foods, margarine, and hydrogenated trans-fatty cooking and salad oils, which have recently been proven as actually detrimental to overall health.

    Hi and thanks for that recipe music,i was just wondering, its hard to get organic kale and ive read that its one of the most difficult veges to wash thoroughly enough to remove pesticides, i suppose growing my own is the answer?-lb

    On occasion even the Aussie supermarket chains have organic kale, the best way though as you say: grow your own, or find someone local who does. Develop trust with local growers - many grow organically but lack the expensive certification. I like to bypass government anyway, and am all for developing lines of trust and supply within the community. Kale is amazing stuff, but yes, lots of curls for the nasty stuff to hide in! Easy to grow though

    Coconut oil is the best! I like it on toast, or try using it for popcorn....you'll never want to go back. This is my favorite brand:

    It really is the only oil to use! We use it for everything, and go halves with another family to buy it in bulk, because off the shelf it is pretty expensive! We have also used coconut oil successfully to control my daughter's excema, and it has great anti-bacterial properties too. A good dressing for wounds might be coconut oil and colloidal silver, with a tincure of St John's Wort if the wound is deep (SJW knits flesh together and reduces keloid scarring). Good to see you round again we-R-one

    Your post vindicates what a number of respected researchers have been saying for some time about the supposed health benefits of polyunsaturated fats...

    We just bought our first jar of coconut fat/oil a few weeks ago after 'conk' pointed me on the hazards of cooking with vegetable oils.
    Still not sure how to blend it in with cooking, since the un-deodorized or raw coconut oil is the one that is healthy but tastes like coconut so everything you cook with it will taste like it.

    We take a teaspoon full every day just like that.

    Take notice that there are two kinds of coconut oil.
    Deodorized and un-deodorized.
    It takes two different kinds of production methods to make them in which the deodorized version is heated with steam of several hundred degrees Celsius to get rid of the coconut smell, but most importantly the fungi, molds and bacteria that are formed during the drying process of the coconuts. People just let them dry on the bare ground where dogs and chickens walk and do their needs.
    The un-deodorized version is dried on shelves in a specially prepared barns, where no animals or rain can get, so no molds, fungi and bacteria get a chance.

    The deodorized version is cheaper, but it should not be hard to conclude that lots of healthy components in the oil get destroyed during the extreme heating, since coconut oil is only resistant to heating up to 160 degrees Celsius (320 Fahrenheit).

    Try banana pancakes cooked in coconut oil, squeeze some fresh lemon on when they are done and sprinkle coconut sugar. Delicious.

    For a dairy free - gluten free version: use buckwheat flour, eggs, mashed bananas and rice milk in the mixture.

    Aside from all of the nutritional benefits, it also works well as a substitute for deodorant, toothpaste and hair conditioner. For weeks now, I've been using a homemade deodorant made primarily with coconut oil and can't believe how something so simple, healthy and cheap can work better than commercially made stuff.

    Eggs and chicken are both super yummy cooked in coconut oil, too !
    I fell in love with coconut oil back in the days of the "coconut oil diet" that a bunch of women were on, and discovered they couldn't gain weight when they were actually trying to after they lost too much. LOL
    I noticed eating coconut oil every day that my arthritis pain was gone, and I almost never became sick with colds and such that everybody else had.
    This is my favourite. Super yummy.

    I use coconut oil on my face, hands and arms at night and I can't believe what it does to my dried out skin..it is better than any fancy, overpriced stuff that I have no idea what it contains. I also love the taste and texture of the stuff...

    My wife makes homemade toothpaste, deoderant, and moisturiser, all coconut based. Also, being natural and naturally anti-bacterial and anti-fungal, it makes an excellent personal lubricant, if you know what I mean
